Coriander is used in the form of seeds and leaves in various vegetables, curries, salads, spices. Its leaves contain Carbohydrates 6.3%, Protein 3.3%, Fat 0.6%, Fibre 1.2%, Moisture 86.3%. Besides, it contains iron, calcium, phosphorus, carotene, riboflavin, thiamine, niacin, and vitamin –C, oxalic acid, sodium and potassium. Their calorific value per 100 gms is 44.
When ripe, coriander seeds are dried, containing an agreeable spicy taste and aromatic odour. The seeds contain Carbohydrates 21.6%, Protein 14.1%, Fat 16.1%, Minerals 4.4%, Fibre 32.6%, (per 100 gms of seeds), besides this the seeds also contain all the minerals & vitamins which have been mentioned in case of green leaves, above. Their calorific value is 288 per 100 gms. Only seeds are used in spieces but leaves are used in Chutinis, Raitas, Vegetables, Meats, and Salads etc. Coriander seeds also contain fatty oil and essential oil.
Coriander leaves promote and strengthen various functions of stomach, thereby aiding in digestive process. They are tonic and stimulant, reduce fever, increase urinary secretion/discharge, relieve flatulence, act as an aphrodisiac, purge out phlegm/catarrhal matter from the bronchial tubes. Coriander juice is an excellent source for compensating lassitude of vitamins A, B-1, B-2, C and iron.
Dysentery can be treated by taking 1 TSP decoction of Dhania powder, mixing 5 mg suger candy to it. For diarrhoea and indigestion, prepare chutni from grated coconut, dry coriander, green chillies, black grapes (without seeds) and ginger-black salt may be added to the said ingredients, if taste permits. Mix Coriander powder (60 gms), Black paper and black rock salt (25 gm each) ½ TSP should be taken, after meals with hot water or else coriander powder with black salt (1/2TSP) will also be useful in digestive problems.
Mix 10 gms each of coriander powder, cardamom, cumin. Fry and powder all the three. A TSP, taken after meals, with skimmed curd/curd controls indigestion, diarrhoea and improves appetite seeds in ½ a cup of tea.
Nausea, Vomiting and Giddiness
Boil Coriander powder in water and mix sugar candy to the liquid (method, as stated earlier)
Cholesterol Rise and Renal Malfunctioning
If coriander water is taken daily, it will reduce serum cholesterol level and also stimulate renal functioning by its diuretic effect. Boil dry coriander seeds in water and strain the decoction after it has cooled.
