Cheap budget foods for the family
When I tell you if you would be interested to cook cheap budget foods for the family you would probably visualize a frugal meal of rice and vegetables. But here is some recipe I found on the internet and experimented with it. It looked and tasted great after I tried it out. My son who is rather a nitpicker on food, gave me an A grade. I am happy about it and I thought I should share the recipe. You can keep it away for those rainy days when you have not been shopping much for food. I am sure you would earn accolades for your wonderful job.
The name sounds pretty interesting, Butternut squash with spicy chilli. These are one of those tangy, mouthwatering delights for supper. So go ahead and gather 2 butter nut squashes whose seeds have to be scraped out and halved by the length. You would also include olive oil two tablesp, chopped red onions, red chillies finely chopped and de-seeded, 250 g of minced lean beef, 2 tbsp cumin grounded, 2 tbsp tomato puree, 410 g of rinsed and dried up kidney beans, chopped coriander leaves, a handful and 50 g leaves of spinach. The ingredients are easy to gather.
The oven is heated to 180C/gas or 200C/fan. The squash are rubbed with little oil and roasted for 45 minutes in the baking tray until they become soft. The remaining oil is to be heated in the pan and then the onions are fried till they are softer. The puree is put in with the beams and splashed with some seasoning and water. The soft and baked squash is filled in with this mix with the chilli and the coriander into it. The spinach should be dressed with some olive oil and seasoned. It can be served with the stuffed squash.
