Gazpacho Salad

Gazpacho Salad is something that we would all love to have once in a while even when we are on a diet schedule. This salad contains all the important healthy supplements that can give you a fine health boost. The ripened tomatoes contain a lot of beta carotene which is essential for fighting cancer.

You need chopped basil leaves, olive oil, red capsicums that are chopped after seeding, chopped red onion, crushed garlic, cucumber that has been peeled and seeded well, a pinch of sugar. We would also need sherry vinegar three to four tablespoons, iced water, fleshy tomatoes, eight of them and large that has been seeded and sliced off, black olives chopped finely and also sourdough bread.

Peel the ripened tomatoes and put them in a large pan that contains boiling water for one minute and then put them aside until they are cool enough for handling. You can pierce the tomatoes with a knife and then they can be peeled away and kept aside. The cucumber, garlic, capsicum, vinegar, sugar, sea salt and oil along with black pepper are to be tossed together along with some pepper that is ground and added for taste.

The basil mixture is to be mixed in the bowl. These are to be put into the food processor and then mixed thoroughly. These are again seasoned with ground pepper and sea salt to taste. Now the Gazpacho is scooped out into little tomato bowls or cups. Eggs are scattered and served with black olives. This is a serve for 4 people and this can be served with sour bread.

The dish is palatable and healthy and it is a good afternoon snack for your kids when they are back from school. This can also be an excellent evening snack for friends come to see you.
