August 25, 2008
We, housewives, are often at a loss at how we can utilize the left overs. We do not have the heart to throw them away. Suppose you have a loaf of bread that is stale and some rice in the fridge. Instead of throwing these away you can easily transform them into delicious dishes that can be served at the breakfast table, at lunch or even at dinner. Choose from the common left over matters you might have in the kitchen right now and turn them into delicious food in no time.
So instead of giving the whole lot of leftovers to the birds, you can use them in endless ways now. An Italian soup with bread crumbs in it to use in a bread pudding for brunch can make palatable dishes. These could be a classic stuffing made with pork or chicken in summer. Bread pudding is a great desert that is loved by almost everybody.
Here is how you can make some easy tomato and bread soup from the left overs. This is a wonderful recipe to work out on when the kids are hungry as this makes a sumptuous dish.
This serves six people and the time required to make this dish would be one hour and forty five minutes. You would need one big onion, six garlic cloves, tomatoes, two pounds, chopped basil leaves, two tablespoonful, chicken stock, left over whole bread in six slices, ground pepper for taste and a teaspoon of sugar and some grated cheese for taste.
We have to first peel the onions, slice them and then mince the garlic after peeling. Seed the tomatoes after peeling them and then chop them. The breads crust should be removed. The garlic and onion is to be sauté d in olive oil till they are golden brown. The tomatoes and half the basil are to be added. It needs to be simmered for ten minutes. The stock is to be added to that and when it starts boiling, the mixture is stirred and pepper and salt are added for seasoning. Some sugar is added too. This should be allowed to simmer for some one hour in low heat. Serve hot with some more basil and with grated cheese on top.
There, your soup from left over bread is ready with ordinary ingredients that can be supplied from the fridge at any time.
