Perfect Roast Potatoes

Many of us wonder why the roast potatoes we had in the restaurant are always much better than the ones we make at home. Well, there may be some shortcomings in our recipes. Here is a perfect recipe for those who want their roast potatoes being a bit more golden or crispy.

A) WHAT WE NEED:

1.    Large potatoes, quartered and peeled, 6 in number.

2.    Medium for roasting, (vegetable oil/ olive oil/ duck or goose fat).

3.    Salt as per taste.

B) THE PREPARATION:

1.    the potatoes placed in large container with cold water are to boiled, as the water starts boiling lid should be removed and boiled for another 5 minutes.

2.    In the meantime, the oven should be preheated at gas mark 7 or 425 F or 220degree Celsius. A large tin for roasting with the cooking medium should be placed in the oven for heating.

3.    The potatoes should be drained and the water kept aside for gravy or soup or stock. Potatoes are to be returned to pan in groups and shaken vigorously to make the edges soft. One can scratch the surfaces with fork.

4.    Add the potatoes to the tin taken out from oven. They should be turned in the oil quickly and then cooked at the top of oven for about an hour.

5.    Halfway through cooking the potatoes should be turned to get an even browning effect.

6.    the crispiness outside and softness inside should be checked before removing from heat

7.    Garnish with salt, or paper or other ingredients as per your desire and serve.

For those calorie conscious people, it should be kept in mind that potatoes are very much caloriegenic, that is, they have high calorie content. But at the same time potatoes have starch and hence are a rich dietary source of carbohydrate and some minerals. While one should be careful of calories these days an occasional treat of roasted potatoes is not a bad idea after all. And for children it is definitely nutritious.
