Strawberry Jam – an easy recipe
Strawberries have a very low quantity of pectin which is the setting agent required for setting a jam or jelly. The jams that you get in the market add more of pectin in the jams. Fresh lemon juice is said to supply the pectin for some jams to which it is added to the jams. If you need some extra pectin that can be supplied cranberries are the best substitutes. A quarter of cranberries can be can be added to the strawberries while making jam. The taste of the jam can be a bit sharper but it would taste lovely. If you plan to make strawberry jam for the family, you can start right away if you have the ingredients ready.
The strawberries are to be put in the pan with a little bit of water and simmered till they become soft. The old fashioned method of preserving jams is the best because they help to evaporate. The berries are crushed with a masher and that helps in making a nice texture. You would need six kg of strawberries and six and a half kg of sugar with eighty mili liters of lemon juice, and bring them to boil together. Now the most important part is the wrinkle test. A teaspoonful of the mixture has to be put on a plate and put in the refrigerator for a few minutes. You can run your finger on it to see if it is set. If it wrinkles it has set and if it has not set, then it has to be boiled a little more and some more sugar is to be added. If the jam is too sweet then you would do best to add some lemon juice. Some cinnamon can help. After it is done, then the jam is to be rested in sterilized jars.
